What are your favorite cold dips and spreads?

Now that it's in the 90s everyday and folks are visiting from out of town we need to amp up
our cold dips and spreads game.
 
What are some of your favorite appetizer-style dips that you can put out for guests alongside
French bread points or crostini?

Absolute favorite cold dip is Skordalia.  Intense garlic flavor paired up with rustic mashed potato texture, spread thick on a soft/chewy hunk of Greek bread.  Nuthin' better.
 
Second favorite is Baba Ghanouj.  The best versions have a deep smoky flavor balancing off the bitterness of the eggplant.  Serve it up with some pita bread, cherry tomatoes, and a bowl of Lebanese pickles and pickled turnips on the side.

I'm partial to just about any sort of cheese spread ("bar cheese"), especially if it's made with bleu or has a strong Worcestershire note.  If you start with a quality basic cold pack cheese (Kaukauna Klub, Merkt's, etc.) it can be softened for easier dipping with mayo and/or sour cream and livened up with whatever flavors you see fit; personally, I think roasted garlic cloves and a touch of mustard are great.  Put some sturdy pretzel pieces alongside, too.

I love that Skordalia recipe. I'd add a healthy dollop of crema Salvadorena at the very end. And SC reminded me that I need to make a big batch of beer cheese.

I've always been a fan of the old school clam dip, since I was a kid. Yeah, it's a very 50's thing, but it's sooo good! And a container of the ever popular Kentucky fav Hall's Beer Cheese cannot be beat! Usually available outsside KY at Sam's Club.

2 8oz bars bars regular cream cheese
1 small package Budigs chipped beef
1 bunch green onions
 
chop the beef and green onions somewhat finely....maybe 1/3 the width of a typical little finger nail
 
reserve 1/4 of the chopped material
 
mix the rest of the chopped material well with the cream cheese
 
form the mixture into a ball
 
coat the ball with the reserved chopped material
 
excellent with crackers or a toasted non-sweet bagel

I always have to make Creamy Jalapeno Ranch dip for the family get-togethers (if you've ever eaten at Chuy's you'll know what I'm talking about).

I'm surprised Budig's is still on the market. My sister and I would fight over it
when we were kids. I haven't seen it in ages. I like the sound of that recipe with
chipped smoked brisket as a substitute.

Benedictine is a cucumber/mayo dip or spread made famous in the 19th century in Louisville. It's a "ladies who lunch" thing and in the right hands of the right cook can be unfathomably delicious.

Budigs is generally always available at local groceries here in Cincinnati, same area where you'd get Oscar Meyer bologna and such

These are all good for dipping breads or vegetables:
Three different ones here: Bleu Cheese & Walnut Spread, Gorgonzola & Toasted Walnut Spread, and Three Onion Spread
Blue Cheese Dip
Buttermilk Peppercorn Dip (this one is pretty thin, better with bread)
Mediterranean Spread
Easy Onion Garlic Spread
Olive Cheese Spread
Garlic Herb Cheese Spread
 
And if you want to do something different and have fruit for dipping, this is hands down my favourite. It's the dressing from Fruit Crack! Creamy Fruit Dip and Dressing

I love the many variations of herbed olive oil for dipping Italian bread into instead of butter in so many Italian places these days!

I don't believe I've ever had a dip or a spread. Well, I take it back. I have dipped snuff, but I'm guessing that's not what you're talking about.

I must admit to eating many pounds of matbucha when I lived in Israel. It's essentially a Moroccan salsa. Usually a bit on the acidic side. I can eat this stuff right out of the container!
