What happened to sausage pizza in NYC?

What?  Sausage pizza on the decline in NYC?  What gives?

    Sausage used to be my favorite until my age prompts me to skip sausage and pepperoni.  I now opt for meatball.  Not all vendors have it but I'd skip the sausage if they didn't.

    While I can enjoy most anything on a pizza(and have)...I prefer a QUALITY pie plain...and yes, ingredient quality matters...too often cheap sausage crumbs are used...yech!!!

    That is a shame.  Sausage - good sausage - is a better meat topping than any pepperoni.  It's one of my first tests of any pizzeria I haven't been to before (the other tests being spinach, garlic, and a plain cheese pie).

    My first test is whether they use real mushrooms, so we always order a half plain and half mushroom if it's our first time anywhere. I do like to ask if the mushrooms are fresh, and they're either going to tell you the truth, they're going to lie, or they "have to ask". Canned mushrooms are the culinary devil to us when we eat pizza.

    I totally agree with Ketteract. Btw, the picture of the Sicilian slice with sausage caused me to drool all over my keyboard.
     
    Growing up in NY, good Italian sausage and fresh garlic were the only toppings on my pies.

    Now THAT is one of the best Pizzas, if not the best I have seen posted here!    THAT is how a pizza should look like..........notice how the cheese and other ingredients go all the way to the edge of the crust!  Most pizzas are not like that and you end up paying for crust!  Yours also has what appears to be Xtra cheese and NOT that sprinkled on garbage most use!  The sausage also is baked into the cheese the way its supposed to be and doesnt just sit merely on top whereas it falls off when you pick up a slice!  I am  huge pepperoni fan but I would never turn down a good sausage pizza like yours!

    The Post story mentions pineapple as one of the toppings that's increased in favor, which might seem odd and somewhat unexpected in a city with a rich pizza tradition.

    Funny...I see pineapple on almost every pizza menu in the Chicago area....as often as fresh mushrooms (agree with above fresh mushroom comments) and more often than anchovies.  The times they are a changing...

    Knowing Bill, I don't think that's what he's getting it. I think he's "implying" in a thinly veiled manner that NYC's "rich" pizza tradition is highly overrated
     
    I agree with CTD, the times have certainly changed. When I lived in the  NYC area just a short couple of decades ago there was no such thing as a "grandma slice" now they are everywhere.

    I prefer sliced sausage to the "crumbles." Often I will ask if bulk sausage is used or if they use sliced sausage. The last time I asked this, our waitress proudly said "sliced, and the owner makes his own sausage!" This is Luigi's in Graham NC just off I-85, a small place, not much to look at, but clean, reasonably priced, and really good "cooked from scratch" Italian food, sandwiches/subs, and pizza. I've been there about 5 times so far this year and have really enjoyed the food every time. My sons, my mom, and I went there for Mother's Day. I had the homemade ravioli - superb!

    I usually avoid sausage at most places, but I do like the sausage that the Mellow Mushroom chain uses. It has a nice hit of fennel seed that says good sausage to me. Most places just seem to use the cheapest most tasteless pork product they can get. I'll stick with anchovies over bad sausage.
