Right now we have 5 different kinds of Tabasco, 5 kinds of Cholula and a tube of harissa!  I'm sure there are more.  That was just a quick look in one kitchen cabinet.

Hmm. Is it still Tabasco with all that stuff? Chipotle & raspberry. I've got to ponder that one. I love Zatarain's seasonings; I'll have to see whether anyone can get it out here in the wildness.

It is not Tabasco sauce. It is a hot sauce, though. A chipotle hot sauce, like their chipotle tabasco. Kinda fruity and smoky at the same time. I'm having a time trying to fit it in.

regular Tabasco is garbage to me, just heat with no flavor. I like the chipotle one quite a bit though, and the jalapeno one in a crunch when there's nothing else on the table

living in St Augustine, I mostly use datil pepper sauce. You can buy it in markets and restaurants around town, but we are lucky and have a neighbor who makes it. Excellent on eggs and potatoes.

other than that, i use siracha, chilli garlic paste, and peri peri sauce. I just tried harissa for the first time last night on some roast chicken. tasty!

McIlhenny Tabasco and Louisiana hot sauce, don't now why we have both, used mostly in stews, soups, Cajun dishes. Thai chili and Texas Pete's Buffalo for wings. Sriacha for no particular purpose.  Chipotle and Walkerwood's Jerk to jazz up our BBQ sauce.  I've also used Chipotle on smoked turkey.   I use Cholula on Mex, but don't have it at home. Probably one or two others, but I'm too comfortable to get off my heating pad to go to the frig and look.
 
We're headed to St Augustine in January and am anxious to try some datil pepper sauce.  And I'm all over that Zatarain's Cajun.  Thanks for suggesting both.

It has the consistency of, say, Tabasco.
And I assure you that it is HOT.
 
But whatever you call it, it's doggone tasty - especially on pork or chicken breast.

Kind of. It's got flavor beyond just heat while it has plenty of heat. It isn't vinegar based.

if you are coming to St Augustine I assume you are going to O'steen's. You will find datil pepper sauce on the tables there in Grolsch bottles, add some to your shrimp sauce. There's a hot sauce store downtown reviewed here on Roadfood, and just down the street from O'steen's is a sandwich shop called Old City Market that sells some of its datil pepper sauce, it's quite good. You may even be able to find it at the publix down here

We went to Legend Hills Orchard for cider and grabbed a bottle of their Fire Roasted Habanero Hot Sauce.

Time for a necropost update here. On our recent trip to the Gulf Coast and NOLA I found a couple of new sauces that are pretty darned good.
Zatarain's Hot Sauce is a vinegary based cayenne and garlic sauce that is addictive. It's really tasty and I can't stop using it. This one will replace every other sauce when it comes to putting it on something like red beans and rice.

 
 

Sounds good to me. My local Kroger store has it on the shelf and I'm going to try it next time I shop.

Well, I've been using it on various things and have found it to be a great steak sauce. Not too hot, with lots of flavour. I wish this stuff came in bigger bottles, I'd really like to use it to make hot wings. It would be perfect, better even than Frank's.

I wanted to buy a bottle of Zatarain's at My Kroger store but they only had a large bottle for almost $5.00. I'll look around at some of the other places I shop for a small, less expensive bottle. I'm just wanting to try it for now.
