What hot sauces do you use?

I used to keep about 15-20 bottles of hot sauce around. Over the years, I have weeded out most of them, and typically, I use the following:
 
1) Tabasco. Nothing else like it.
2) Cayenne: I use Frank's Red Hot. I find it pretty much indistinguishable from the other cayenne sauces (Trappey's, Crystal, Texas Pete's, etc.), but I get coupons which make it less than 20 cents a bottle.
3) Jalapeno: I currently use Goya for that.
4) Habanero/Scotch Bonnet: I find that, with the straight stuff, the heat kind of overpowers the flavor. I find Dinosaur Devil's Duo makes a good balance.
5) Cholula: The arbol/piquin mixture is good with Mexican food.
6) Chipotle: I use the Tabasco brand, mainly due to coupons.
 
Two others: especially for Middle Eastern food, I will make my own out of cayenne and water. And for Ancho chilies, I use those just in cooking, and keep a bunch of dried ones in my refrigerator.

 I have a few favorites myself. Right now I really like the Buffalo Brand Chipotle Hot Sauce. It is much hotter than the Tabasco brand. It's great to put a little in with Frank's for a little more kick on wings. Cholula is very flavorful without adding too much heat in Mexican food.

I used to sell hot sauce in my store.  It's not my store anymore so luckily I took cases of my favorites home with me.
I find that I like specific sauces for specific items.
 
Inner Beauty Real Hot Sauce by Blue Marlin is not made anymore and it's my favorite for Egg McMuffins.  It's a mustard based sauce and I wish someone would copy it before I run out.
 
Ring of Fire is great on omelets
 
Georgia Peach is great on fried fish
 
911 is great mixed in to cream based pasta dishes
 
For everyday use I use:
 
Cholula
Texas Pete's
Tapatio
La Victoria Green 
Dat'l Devil Drops
 
Then there's something that looks like catsup and it's called banana sauce or something like that.

Sriracha, Asian sweet chili sauce, Frank's red hot. Fr sandwiches, I make Cajun mayo with regular mayo, spicy mustard, a little sugar and dried ground chipotles. That combination is good on almost anything including fish and burgers. Technically not a hot sauce but a spicy condiment. Add a little cumin and you have a sauce for fish tacos.

McIlhenny Tabasco and Tobasco Chipotle
Minorican Datil Pepper Hot Sauce
McCutcheons Garlic and Herb Hot Sauce
Dave's Insanity
Tge Ghost Sauce with Bhut Jolikia Peppers{the hottest pepper on the planet]...I use this liberally on wings that wiseguys say, "I want the hottest wings you got"...they all agree, after recuperating, they were the hottest wings they ever had. The stuff makes Dave's Insanity seem like Ketchup
Also Minorcan Datil Pepper Vinegar{ great on French Fries and makes a Eastern Carolina sauce for Pulled Pork

Everyday use varies between Cholula, Tabasco, and Louisiana.
 
Extra special occasions call for Redneck Whiskey Wing Sauce, Scorned Woman, and Dave's Insanity.
 
I don't know what it is about Frank's, but I can't stand the stuff.  Too much vinegar or something.

Tabasco Original, Tabasco Garlic Pepper Sauce, Cholula (not Cholula Bankhead), Frank's Red Hot, and Crystal, in that order.  
 
I avoid the sauces with preservatives, colors, etc.

I am not aware of any way to mail order it, but the hot sauce at Chef Wayne's Big Mamou
is unbeatable ... the secret ingredient in my chili.

Different ones for different purposes:
 
Favorite for general table use (and especially for Cajun/Creole food like jambalaya):  Crystal  (I'll probably get some argument on this but I prefer Crystal to Tabasco for table use because to me it seems to have less heat and more flavor).
 
For adding some heat to a lot of cooking:  Tabasco
 
For Mexican food:  Cholula
 
For Chinese cooking:  Huy Fong Chili-Garlic Sauce (same company as makes the better-known Sriracha)
 
For Chinese dipping sauce:  Either Sriracha or homemade chili oil made as follows:  Add one bag of small hot dried red chilis such as chile Japonaise or Thai "bird" peppers, lightly crushed,  to a non-reactive pan (such as stainless steel)  containing 500 cc to a liter of good quality peanut oil.  Heat until peppers begin to blacken and smoke.  Turn off heat and let cool for a least a few hours, preferably a few days (the longer you leave the peppers in the oil, the hotter it will be).  Strain oil through cheese cloth or a coffee filter into a dark container (clear glass will cause the oil to turn rancid sooner) and store in a cool, dark place--a kitchen cabinet away from the stove is fine.

About the sauces, I am a bit 'middle of the road' in my very sparsely used Tabasco- Red (Breakfast Eggs) and Tabasco-Brown. I find myself using the Chipotle Tabasco in place of a dipping sauce with Beef or Pork. No A1 in my house anymore!!
We have several others in the house for use by visitors, and at least 20 varieties of BBQ sauces collected on our trips...but I tend to stick to the Tabasco Products when I do use a bit of hot sauce.

It is in all supermarkets in the West. Between $2.00-2.50.
Comes in hot and mild. 
Hot but smooth. :)

I only use hot sauce in cooking. My favorite is Louisiana Gold Pepper Sauce. It is made by the same firm that makes Louisiana Hot Sauce, Bruce Foods.
In my neck of the woods, most ShopRite supermarkets have it.

First you said Pico Pica was the West COAST favorite, Bill. That I won't argue with. But then you said it was in "all supermarkets in the WEST". That's not so--I actually looked for it today at Safeway (headquartered in Oakland) here in exurban Tucson and they didn't have it.

I have tried many.  Most are way too hot for me or have way to much vinegar.  I have narrowed down for my own taste as Cholula.
 
I have several in my refrigerator and have made some from my garden.  I grew these little toxic peppers that are about the size of the tip of your little finger.  I think that they may be Thai???  I am not sure but they use them with the General Tso chinese chicken.  I put them in a bottle with some oil and vinegar.  Iwanago really like them but for me, they are way too hot.
 
Cholula is the only one that I regularly buy.

I keep jars of cayenne (dry), and Sriacha in the refrigerator and alternate between the two.

I have more than I can remember but Louisiana Hot Sauce is my everyday choice. I must look for that "Gold" that David mentioned.

Tabasco, Cholula, and Scott's Barbecue Sauce - a hot, vinegar-based exemplar of Eastern Carolina.

Siracha (This is my go to sauce for the past 20 years)
Chili Garlic Paste (Great to add to Stir Fry while cooking but don't breath in fumes) Mix with oil and use on Crab Rangoon, Egg Rolls and Pot Stickers.
Cholula (Not Hot but great flavor)

There are a bazillion hot sauces on the market these days.  What you use depends on what you're eating.  Without naming and critiquing all of them - my three top favorites are
 
Cajun Chef  - It's less vinegary and hot - it's a perfect addition to anything you want to flavor up a bit
 
Crystal  - I agree with BT - it has more flavor and less heat than the granddaddy of them all............
 
Tabasco - While it may not be my most favorite - it's the definition of hot sauce - what the others have used as a role model.
It's all good.
