Today required comfort food. Which I screwed up by trying to use an entire 8-count tube of biscuits instead of only using 5 like I should have so dinner was late. Whatever. I'm having wine now.

I called this Biscuit Chicken Pot Pie.

I had a fabulous dinner tonight.  Very different and not Roadfood.

My brother and his family took me to The Ponte, one of Scot Conant's restaurants.
We split an order of Gnudi that were so rich and luscious.  Delicious!  The waiter suggested we share a margarita pizza.  I could have eaten just that.  So simple and so good.  Less is better!

I left my phone at home!  I couldn't take pictures but my brother took one of my main dish.  I had branzino that was served with cipollini onions, mushrooms, manila clams, weeds and a salsa verde.  Very good fish.

Both of yours look good, mar!

I bought a rotisserie chicken, some coleslaw, and some redskin potato salad at the grocery store and called it dinner. And now I have TWO chicken carcasses for my soup stock tomorrow!

Today was all about good food day! For lunch I went back to Balinski's and got the same lunch special, but instead of potato pancakes paid them a little extra for a bowl of dill pickle soup that made my toes curl. And I came home with a custard-filled Paczki for later!

Dinner was a recipe the guy calls Almost Homemade Chicken Noodle Soup. He sent me the recipe and his photo a few days ago and I had to make some for my own. My mother even liked it!

Re: What's For DINNER ...??? 2018/01/26 19:09:12 (permalink)
Sure! I added something like 1/2 teaspoon each: dried oregano, thyme, basil, and rubbed sage, but otherwise did what he said.

Almost Homemade Chicken Noodle Soup
Serves 10

1 rotisserie chicken
1 quart chicken broth
8 oz egg noodles (dry)
1 yellow onion, medium to large
5 stalks celery
5 carrots
1 head garlic
3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil, divided

Step 1: make stock
Heat 1 tablespoon oil in a 4-6 quart pot over medium-high heat. Peel and smash half the garlic and add it to the pot. Roughly chop half the onion, 2 carrots and 2 celery stalks; add to the pot to soften, about 15 minutes.
Pick all the meat off the chicken and set aside.
Add broth and chicken bones to the pot. Add enough water to cover. Bring to a boil, then reduce heat to medium-low, cover and simmer for 1 hour. After an hour, strain off the solids and set the stock aside.

Step 2: make soup
Heat 1 tablespoon oil in the pot over medium heat. Chop all remaining vegetables into bite-sized pieces, then saute until soft, 10-15 minutes, stirring occasionally.
Add stock back into pot, bring up to a simmer until vegetables are fully soft, an additional 10-15 minutes, stirring occasionally.
Chop all of the chicken meat into bite-sized pieces and add to pot. Add more water to cover, if necessary. Remember, the chicken is already cooked, so you're just heating it through. After another 10 minutes, add the egg noodles, then cook another 10 minutes or until the noodles are done to desired tenderness, stirring occasionally. Season to taste with salt and pepper.

Tonight I made pizza stuffed chicken, served simple with a bag salad and cottage cheese.

I just finished charring and peeling 4 poblano (Pasilla) chilies.  Tonight I'm going to make green cheese enchiladas and chili rellenos.

These will not be served:

I went simple tonight so I could watch the Grammys.  What happened to music?  People don't just stand and sing?  Where are the tunes?

Glad I didn't bring out the fine china to watch!

She got tired of TJ Jackson acting like a buffoon in the NFL thread so she said goodby and signed off for good. I don’t blame her and she isn’t the first one who has quit posting because of his act.

I'm hopeful that Lisa will return to Roadfood. She loves it here, and she enjoys talking about food and engaging with so many wonderful people. But the nastiness and stupidity of an idiot pushed her away.

First time in years I was at a bar for the game, and my bar does one heck of a potluck! We had chili dogs, pulled pork, Philly Cheesesteak sliders, baked beans, veggie pizza (the cold one with puff pastry crust, cream cheese, and minced veggies), Swedish meatballs, BBQ pineapple meatballs, spinach dip with pita, macaroni salad, potato salad, chips and dip, veggie tray with dip, a giant selection of pickles and olives, cherry cobbler, and apple crisp. It was dark and crowded so I have no photos and I may well have missed some food.
