I do not have a recipe for the soup, which makes me very, very sad. The few people I've known who make it guard their recipes like the gold in Fort Knox. You'd think it would be easy to figure out, but there's an indefinable *something* I can't quite get.

Your soup intrigued me as well.  I looked up a few recipes, and most are quite similar; however, there are little differences...some use sour cream, some use regular cream, some have a bay leaf, one even had curry powder!  I picked one to try.  The picture really looks like the soup you ate!

I got lazy today and threw together a bacon and asparagus quiche, then served it with deli bacon ranch pasta salad and deli loaded smashed potato salad. Whatever.

The smashed potato salad *looks* good, but it probably contains Hidden Icky Things that I don't like.  Like celery.  And raw onion.

We had flank steak.  Thursday night I salted it and doused it with A-1.  Yesterday afternoon I slopped on some worcestershire, and last night I squeezed on a couple of limes and added some Lawry's seasoned salt.  I'll be darned if it actually didn't turn out half-bad.

Hi Felix

Your quiche looks beautiful.  On Friday night, I had salt-and-vinegar potato chips and wine.

PS: In the interests of Australia's culinary reputation, I should say, that is NOT a typical Australian meal!!!!!!!!!!!!!!!

Hi, NQV,

Red or White?

The wine, not the vinegar.

Don't mind me.  I'm tired.

Good night!

We had a dish my mom always made in the 50's and 60's. Have talked about it here years ago. She called it Swiss-pasta, a dish she got from a Swiss friend, Italian shells smothered in ground beef cooked in onions and butter, peas spread on to it, then lots of grated swiss cheese that melts from the heat. It's actually quite good...and fattening!!

Tonight we're having pumpkin soup, with grilled bacon and egg sandwiches.
Amazing what you can make with only four ingredients.

Egg sandwiches sound good, NQV.

What you call pumpkin...  are they what we carve for Halloween or just different types of what we call squash?

I made a nasty dish the other night.  Thought it would work but really didn't.

I really shouldn't think ground meat would be a good substitute for diced meat.

I made the insides of a Pasty and instead of putting it in a pastry, I served it over toast.  AWFUL!

Hot sauce saved the day!

Re:What's For Dinner TONIGHT...??? 2018/06/28 06:38:40 (permalink)
Hi Mar

They were actually "bacon and egg sandwiches" which is even better!  Bacon topped with a fried egg and tomato sauce (ketchup) on toasted muffins.

The pumpkin is what is called "butternut pumpkin" in Australia.  It looks like this.  I think you'd call it squash.

Reading about your ground/diced meat situation made me think about the time I made what C and I call the "rubber fish" many years ago.  Probably not long after we met in 2003.  It was truly indescribably horrible. So bad it's still our kitchen disaster benchmark.

HI NQV.  I love the title Kitchen Disaster Benchmark!

Mine was a risotto made with a too stinky cheese.  Down the drain it went!

Didn't have eggs sandwiches last night.  What did I have??

Thinking...

Oh!  UDI Frozen lasagna which is really very good.  I thought I was purchasing the white variety but this one had red sauce.  How could I not tell by the picture?  But it was good and now I have to clean the microwave.  Red spots everywhere!  Which of course is a reason to search out the white lasagna!

Thinking about Apple Pan's Egg Salad Sandwich for tonight's dinner.  It's hot here and I deliver a meal to my friend, Karen a few times a week.  That would be perfect for her.

Last night's dinner was a sleeper - Corned Beef and Cabbage Soup. It was really good, for very little work - as they say, the sum was much greater than the whole of the parts.

I'm assuming it's not appropriate to post recipe links on this forum, so in a nutshell, it involved:
  • Sauteeing onion, garlic, carrots, celery, herbs and seasoning in butter for 5 mins
  • Adding chicken broth, potatoes and cabbage, simmering for further 20 mins
  • Adding corned beef and simmering for another 10.
Interestingly, it called for the corned beef to be sliced thinly, which I did against the grain - the same way you'd prep meat for a ramen.

I suffered through some green, chicken enchiladas that I purchased freshly made from a local "better" grocery store.

Whatever made me think the sauce was just tomatillos and green onions?

I knew what was inside as they were baking.

ICK!  Cilantro!

Had it been fresh and not baked it would have gone in the trash.  Still suffered.

We had sausage pizza for dinner tonight. We ordered it from a local chain, Donato's. It was absolutely terrific. Yes, terrific. I cannot believe I am able to say that about a pizza from a chain -- big, small or otherwise. Granted, I got it uncut and I added oregano, red pepper flakes, garlic powder and fresh basil, then topped it all with olive oil, put it on a metal pizza pan and stuck it into a 400 degree oven for five minutes. Still, it was a chain pie.

There are some good chain pizzas.

I even like Costco's pizza but I add the diced onions from the hot dog condiments.

Tonight's dinner was the same St. Louis style ribs from Costco I raved about the last time I bought them.  Completely different this time.  Very fatty and very salty.  Should have bought the pizza.

I used their pharmacy for the first time today.  What an easy process.  I might be moving all of my prescriptions to Costco.

Anyone take Zetia?  I take it as a secondary pill to a statin for my cholesterol.  It was never available as a generic but it was available from Canada by way of India.  I've purchased it that way for years.  Always a problem getting it but no more!  Now it's available at Costco as Ezetimibe.  Pennies on the dollar!

Tonight is:

For C:  Slow cooked corned beef, cheese, onion and  mustard toasted sandwich(es), served with corn fritters and baked beans.
For me:  I don't know - not inspired by corned beef.  Am thinking more of carbs with a creamy sauce ...

HI NQV,  Oh, it's gone!  LOL

Not sure what tonight will bring.  Taking a friend to the doctor in the late afternoon and if she feels well enough we may go out.  Hope she says yes to it,, more so for her than me.  She's been home bound except for doctors for almost a year.  She needs to get out!

Felix, it was as good as it looks.   I haven't grilled since redoing my kitchen.  Sounds like I use the kitchen a lot but I don't.  Using charcoal is just too much work for me these days.

I bought a small tabletop gas grill and today was the first time using it.  I first had to make the metal cover that totally protected it from the critters.
