Really easy.  I took a pork tenderloin, trimmed it, cut it into 2" pieces and pounded each flat.  Breaded them (flour, egg, seasoned fresh bread crumbs) and pan fried them.  Remove and clean out the pan.  Then added butter, olive oil, fresh lemon juice, capers, parsley, chives and white wine.  Adjust accordingly and add the breaded, fried cutlets into the sauce and reheat slowly for about 5 mins.  I served it with fettuccine tossed in butter and Parmigiano Reggiano and a few more chives (lots of those in the garden!).

A Cajun-seasoned cream sauce over the top of the chops?

I'm looking forward to your dinners of chicken tikka and paneer tikka.

Took the kids out to our local Brixx for a couple of wood fired pizzas. They may be a chain, but they serve some of the best wood fired pizza around. Nice thin crust and never too much sauce, (on the ones that have it). Just a really fine pie. Two pies are usually enough for the 3 of us, ( my wife was in Dayton doing a beer judging gig and she unfortunately is wheat intolerant so no regular pies for her). After Brixx we headed over to Graeter's for a few pints of their finest. I got the awesome September seasonal, Elena's Blueberry Pie Ice Cream. It is sooooo good.

First...  I'll get right on the tikkas.

Second... chops seasoned with Cajun and seared, then Cajun on the vegetables with cream stirred in at the end. It was way yummy!

Tonight I had McDonald's on my way home.

We often have simple tacos (ground beef & Ortega crispy corn shells) on Monday nights, and it looks tonight's not going to be an exception.  I was actually thinking that chicken would be a nice change, but the store had no BS thighs so beef it is.

Sounds good! I'm an Old El Paso man, myself. Their Super sized shells are great for stuffing lots of fillings in. Chicken would have been good, I bet! I started using ground turkey for my tacos, years ago. I like it better than beef, now!

After an 11.5 hour day at work, tonight I am:
  • drinking wine
  • oven-baking tempura-battered New Zealand hoki fillets out of a box accompanied by potato wedges; and
  • microwaving peas.

Greek honey & lemon pork chops, cottage cheese, microwaved frozen vegetable blend in cheese sauce. Considering I went grocery shopping on a Friday after work, she's lucky I cooked anything.

While some people may turn up their collective nose at them, those nuke box veggie sides can be handy and even pretty good.

Mini burgers on Pretzilla slider buns with tater tots on the side for us tonight.

We eat a lot of them because they're always on sale for $1 and they make for two easy servings. I love the baby Brussels sprouts in butter sauce!

Grilled up NY strip steaks, baked a couple of pounds of sliced mushrooms in butter and nuked some sweet potatoes. Cheaper than feeding the four of us at a fast food joint, thanks to Sam's Club!
