Lisa had some leftovers and I made myself some cacio e pepe (although I cheated and included some butter).

Got a surprise 4-hour break today, so I made hamburger casserole, thus saving me from having to toss the burger I took out of the freezer.

That looks good...did you dust it with grated cheese?

I'm trying to fend off a cold and had a craving for Hormel tamales today, so I stopped at the store on my way home from work and bought a can..the big can.  And I ate them straight from the saucepan.

Fortunately the TV is positioned so that I can see it from the bathroom.

I had take-out from California Seafood Grill, a chain.  Scallops with chimichurri and two starches.  The scallops were delicious, but the chimichurri had no taste.  I like rice with lemon squeezed on it.

My mom's Swiss dish I've talked about before the large buttered shells ,onion, chop meat and peas casserole with melted swiss cheese. Amazingly good!

The family went to Portillo's for my son's birthday dinner. Everyone enjoyed their food greatly! I had a dipped Italian beef with sweet peppers and mozz with a chocolate malt. Wife had a big Italian beef with Giardiniera and fries, (ate all the meat and toppings while avoiding the bread). Son had a dipped Big Italian with sweet peppers and moz and some onion rings and an entirely too large vanilla malted. The daughter had the lasagna and a large chocolate malt. It was all very good, as usual and very affordably priced!

I wish they'd hurry up and finish the new Portillo's up here by me!

The pork chops look good, Mar.  I love scallops but having them with chimichurri seems a bit unusual.

The chimichurri was odd.  There was a choice of four  sauces.   I went out of the norm and shouldn't have.

GARLIC BUTTER SAUCE  |  SEASONED OLIVE OIL  |  CAJUN STYLE  |  CHIMICHURRI SAUCE

I'll go back to explore the other items on the menu.  Not enough seafood restaurants!

I don't eat Swai or Tilapia.

This chain has exploded with locations in California.

I agree.  I would not eat one bite of either of these.  It horrifies me when I see Talapia being served in upscale restaurants...……………...but has to be a big profit-maker.

And should that not pan out I bought some suet cakes today.

A really good thing to stay away from is any farm-raised fish. That includes salmon identified as Atlantic salmon.

I'm going to go ahead and disagree with you on this. Farmed fish is perfectly fine. It is tasty and affordable. Look at catfish. Farm raised catfish is far superior to any of them that I have caught over the years. There's no potential for muddy taste and the meat is always nicely firm with just the right amount of fat. And it is not affected by potential pollutants in the waterways. Same for tilapia, which is mankind's oldest farmed fish. It's not much for taste on its own, but it lends itself well to recipes which add in stronger flavours. I've made Tequila Lime tilapia many times and it's always quite good. Not a fish I usually go for if I'm out, but one I have no issues cooking at home. Farmed salmon is also quite acceptable to me, (as is farmed steelhead) and most restaurants and sushi joints from Japan to NYC. I like a nice fillet of wild caught salmon, but farmed salmon is safe, nicely fatty and tastes quite good, raw or cooked. I've used it in restaurants and at home for many a year and have no issues with it, (despite the naysayers frequent attacks on it). Any fish that a world class sushi chef would use is just fine by me. Swai, I won't eat. Mainly due to its sourcing in SE Asia. Same for farmed shrimp from China and Vietnam. Not because farming is bad, but due to the lax standards of their industries.

No-one seems to have any issues with farming cattle, sheep, chickens and swine. I see no logical reasons to think that farmed fish are somehow inferior to wild caught in day to day use. Commercial fishing for most sea fish is becoming unsustainable, (just look at the issues caused by overfishing cod and orange roughy). Farming is sustainable and the product is just fine.

I have seen films on farm raised tilapia and the fish were so crowded  that they could not even swim .  No thanks!

I should have excepted farmed catfish from what I said, although I do prefer wild catfish. But that's the only exception I can make.

I got to cook again! I'm calling it "breakfast pizza", but it could just as well be called "heart attack on a plate". It was darn tasty... Mom even ate two pieces! Sausage gravy, scrambled eggs, bacon, red bell pepper, and extra-sharp cheddar.

Nice! Back when I was working as chef for a club in Lexington, KY  a friend of mine who was the local jailer also owned a pizza shop (Sabatini's). He made a similar pie using sausage gravy, scrambled eggs and smoked provolone with a hit of bacon. He brought one by to see what we thought of it before he added it to his menu. It was great! This was back in the early 90's, so he was ahead of the curve on it! Yours looks good!

I had some short rib soup at a stall in H-Mart, a large Korean Supermarket.

Not my thing... at all.

I expected they'd have some spicy misos to spice it up,  but they didn't.

The soup looks a little thin. But the beef looks plentiful. Was that rice noodles in it? I do like the looks of the banchan, though. That's often my favourite part of the meal at a Korean place.

You described it perfectly.  Lots of meat, broth tasted like water and great banchan.  The noodles were yam noodles.
