I made a crust-less bacon and onion quiche for a poolside brunch this morning.
 
I also had a small part of it for dinner.

I meant to just make gnocchi carbonara, but then I kept adding things because I need to clean out my freezer. So it eventually became something I'm calling shrimp and gnocchi carbonara florentine.  Whatever. lol

It would've been better if I'd had something other than chopped spinach, but it still worked!
 
Tonight I pretty much phoned it in. Mom's been not good lately so I haven't had time to do much. Soba noodles with sauce from a jar (added some stuff), canned sweet peas on the side.

How do you prepare the dill pickle chicken?


I'm just writing up the recipe, but I brined bone-in, skin-on chicken thighs in pickle juice overnight, then seared and baked them in cast iron. Removed from pan, drained off fat, deglazed with white wine, then added some water, fresh dill, diced dill pickle and diced red bell pepper. Returned chicken to pan and let simmer until done. Spoon sauce over chicken to serve.

Not in the least. I put it in brine about 4am and started cooking just after 5pm.

You were up and cooking at 4am? 
 
I went to a Cinco de Mayo party at a neighbor's.  Had an interesting chili with chicken, potatoes, garbanzo beans and other stuff served over cornbread.  My neighbor is Mexican.  His meal was not as far as I could tell.
 
But it only took one margarita to let me know I wouldn't be having a second one.

I poured pickle juice over chicken in a ziploc bag on my way to bed at 4am, if that can be considered "up and cooking".
 
I'm kinda jealous of your margarita if one was enough!

Thank all that's holy for late night delivery, and also my forethought in ordering before I left work to fetch my car at the office so I could have it! I got a lasagna dinner from Vito's Pizza after work and before grocery shopping, and thus I do not own the entire contents of Aisle 7. No picture, I was STARVING! Looks nothing like the picture on the menu, but it's way tasty.
 
Point of interest: If you've see the movie 30 Minutes or Less, this is the pizza place where Jesse Eisenberg's character works. That whole thing was filmed here.

That's pretty rare here... I can only think of one pizza place with a license for beer. Coincidentally, it's the by the slice place around the corner from the arena where I eat fairly often, what used to be Georgio's and is now Lucky Luciano's - same pizza, different owners. When you live in a city where there's a brewery/brew pub on nearly every corner, the small pizza places just don't bother.
 
Vito's does have a truck they send around to bars on Friday nights selling small pizzas, and they do an incredible business after bars close (which is how I discovered them in college ).

Last night I did something a bit different.  Amercian Goulash with way overcook noodles (I used the microwave noodle cooker and punched in the wrong time) in a tortilla bowl.
 
   I topped it with Shaved Parmesan which gave it a different twist on flavor.  Just wish the noodles weren't so mushy.

It's navy bean soup with ham, also carrots, onion, and celery. Had a bone, a couple pounds of meat, and nearly a gallon of pan drippings in the freezer from Easter. It was pretty darn good, albeit a little salty since I usually don't have that much drippings and have to use more water. We'll eat it again tomorrow, then I'll parcel it into portions and freeze the rest.
 
My sister's family was over today so I couldn't make mom's "real" Mother's Day dinner, but I made something she said was good and she actually took seconds! " /> " /> " />
 
One-pot pasta with tuna (Eating Well), and double-ginger celery salad (Better Homes & Gardens).

I meant to heat up the soup, but stuff happened. So, grocery store deli to the rescue: fried chicken, macaroni salad, redskin potato salad. I'm cooking tomorrow, and that'll hold us the rest of the week when I'm not.
