LOL! The ratio of breading to chicken was about 3:1.
 
Honest to god, I was planning on marshmallows for my evening snack.

WW4B, it was awesomely crispy! And even better, when I had some cold for lunch today it was STILL awesomely crispy! I don't know how they do that, but I love them for it.
 
Today was my only chance to make mom's Mother's Day dinner. Caprese-stuffed balsamic chicken, Insalata Caprese, asparagus with bacon and red onion, and Grands biscuits. Later there will be coconut tapioca pudding (I used Malibu rum instead of vanilla, stirred in some toasted coconut, and will top with more toasted coconut to serve).
 
 
 

 
And just because it was so darn pretty...

I made French Toast tonight with really thick bread and tried something different.  After dipping it in the egg I dipped it in crushed corn flakes and then cooked it in butter.  The crunch was a wonderful addition.

I was playing hostess all night at a cocktail reception for our district convention, with appetizers. Burger and pulled pork sliders, spinach-artichoke dip with flatbread, veggie tray with dip, and queso dip with tortilla chips. And moscato from my favourite in-state winery. It's weird to eat catering while attending an event, being served by the people who normally hang out in the back hallway with us at work!

Ground beef, onion, and garlic, seasoned with smoked tomato and Tuscan seasonings, then simmered with a bit of garlic and basil spaghetti sauce. Also ricotta and Italian blend shredded cheese mixed in.

My favorite Cuban dish, black beans and yellow rice with chorizo. I first had it (without the chorizo) in Cuba in 1958. Lisa's version is even better.

All your meals look great. I love black beans,  stuffed pasta shells and linguine with clams. I had Doc's Hot Links (just four) in Gilmer for lunch. For dinner we went to Jason's Deli in Longview. My Wife and I just had the salad bar which was very good, my Daughter had chicken noodle soup and the salad bar. I'm now putting a brisket on the smoker for tomorrow.

This afternoon was my nephew's graduation party, so food was catered by Mad Dogz because that was easier than cooking. They brought toppings to make Mad, Wacky, Kooky, Bonkers, Goofy, and Rage styles. Served with sour cream dill potato salad, baked beans, and a veggie tray with really excellent dip. The main cake was vanilla, surrounded by chocolate cupcakes.

Hi everyone! I am new to this site but certainly not new to cooking dinner and posting photos of what I make. So, here is yesterday's Sunday supper. I could not resist making this dish because the bell peppers were gorgeous and on sale this week. I stuff them with ground beef and rice and they roast in the oven in a light tomato sauce. I don't like a thick tomato sauce with this dish. I make the sauce with tomato paste and water and seasoning and cook it down a bit and then surround the peppers with the sauce and bake.

Tonight I reheated the stuffed shells, served with more cottage cheese and cheater garlic bread. Sliced bread spread with a mixture of butter, garlic powder, onion, powder, Italian seasoning, and grated Parmesan, then broiled.

It must be nice to hire the Amish to butter your noodles, but I've heard their labor rates are quite reasonable.
