Thank you so much, Joy! I'll have to give it a whirl... wouldn't break my heart at all to have fresh ricotta when I do my next giant Italian casserole.
 
Tonight's dinner was courtesy of Better Homes & Gardens, and both recipes were absolutely fantastic! I left the grape tomatoes out of the main dish because I don't like them roasted, and since some creature that lives in my yard really likes fresh dill I had to use dried in the salad, but otherwise followed directions. YUM!
 
Greek Meatballs with Squash "Noodles" and Tomatoes
Cucumber, Olive, and Dill Salad
 
My camera chose to focus only on the salad instead of the whole plate and I didn't notice, so the entree is blurry.

We went back in time tonight,one of my mom's depression era dishes:Hot dog casserole. It's chunked up hot dogs, potatoes and bell peppers:Cover all the pieces with two big cans of tomato sauce in a big caserole dish,add salt pepper, granulated garlic and parsley and cover with foil and bake at 350 for about 45 minutes or until potatoes are tender. That recipe is about 90 years old, and it's still a rustic treat!!

Felix, First of all, you are welcome. Second, I am Greek and so that dish is right up my alley! Keftedes (the Greek word for meatballs) were a staple in my house growing up. I still make them, especially for large gatherings. I never thought to pair them up with squash noodles. That sounds great for when I get back on the stick and start watching my carbs again. I have no motivation lately it seems. I crave carbs...LOL
 
Leethebard, that casserole sounds like something a family would definitely pass down. Such a nostalgic kind of meal.
My grandmother used to make a dish during lent that I still make today because I love it and I  have never seen it anywhere although Chinese culture has their own "Scallion Pancake" but it is different than my grandmother's recipe.
 
She would beat about 10 eggs, add about 2/3 to one cup of flour, some milk, some baking powder and about two bunches of smashed scallions, (just cut in small pieces and squash them with something in a bowl so they are giving up some of their juices) garlic powder, grated parm cheese, salt and pepper. She would mix that up by hand with a wooden spoon until it resembled pancake batter and fry them ( a little larger than silver dollar pancakes) in hot oil. They are easy, fast and delicious.

JoyB that sounds delicious. Love those old dishes, Recipe history of our families is fascinating. Probably would make a great thread here....

Last night, chili dogs. Tonight, cod baked in parchment paper packets with vegetables; spinach with bacon, garlic, and red onion.

Tonight C made two fresh, healthy and all round amazing salads.  
 
I on the other hand have the flu.  So I've opened three boxes of oven-baked stuff - chicken tenders for C, fish for me and corn fritters - which are about to be dumped into the oven and served up in all their glory in 25 mins.

Last night, leftover Greek meatballs with squash noodles and FRUIT CRACK! It's the first appearance of fruit crack this summer... I've been slacking. 
 

 
Tonight, chili dogs, the last of the cucumber/kalamata salad, and more fruit crack.

I haven't; the grapes are so darn good I just make it that way. You wouldn't want anything with too much juice or that was fragile, because it would tend to break down and get soupy. Blueberries might be good, maybe oranges or tangerines... can't think of a lot of fruits that wouldn't crush, but that might be tasty if you didn't have leftovers for more than a day or two. Sort of like a berries and cream. Now I want to try it! I'll have to see what there is at the farmer's market next week.

Corn and burgers on a pair of Weber kettles tonight.  August sweet corn can sometimes be a bit of a gamble but the ears were fine; in fact, I filled up on them and never touched the beef.

I have not yet had fresh corn this year. 
 
Tonight I made three new recipes, all of which I thought were fabulous, but Mom declared dinner "the worst thing you've ever made". So be it, I guess. Veggie spring rolls with peanut dipping sauce, marinated chickpea and tuna salad, and black-eyed pea salad.

Felix... what a colorful meal!

I had a salad with almonds, cranberries and Gorgonzola in it. I liked the crunch of the almonds.

Last night was crab and avocado sushi.. the cooked variety and more Greek salad. With the deadly problem we were having with romaine, I’ve been avoiding all lettuce. I missed my salads.

There was a frozen turkey I didn't cook last Christmas.  It's useby date was 29 August, so last night we had turkey, potato and carrot mash, peas, beans, gravy etc. 
 
When I was checking the cooking time, it turned out the bird's useby date was 29 August 2019, not 2018!
