That is definitely a different recipe than the one I use. Topping a tamale pie with tamales? That's novel!




The XLNT (the brand found in the refrigerated section of the market) tamales have a really good spice and texture and they're in the middle of the meat layers.  No need for spice and it adds that masa layer.  VERY EASY!   
 
It's also gone.  Better the second day if that's possible.

Looks like they're a Western US thing. I'll have to stick with the traditional topping of cornmeal paste (otherwise known as polenta!). Not sure how my kids would react to a tamale topped tamale pie! LOL.

I used to put the cornmeal paste (marmaliga) on the bottom.  I've tried making it with the Costco tamales and they just don't work.  Something about those XLNT tamales.  Too bad they're only local.

Now I need tamales, posthaste! I can't get the XLNT here, but I'm totally making the Guy buy some, and we shall have them next time I visit!
 
Tonight I went to "my" bar for the Super Bowl party, for which a few people always cook. Wings, hot dogs, brats, burgers, potato salad, macaroni salad, chips and salsa, chips and dip, brownies, cake, and any number of relish tray-type items. And of course a ridiculous quantity of adult beverages.

I've decided it's called "Creamy Pasta and Vegetables", because that sounds infinitely better than, "bunch of stuff I found in the cupboard".

That looks pretty good!  And I'll bet a little bacon mixed in wouldn't hurt!
 
I cooked out of a box tonight: Betty Crocker scalloped potatoes with plenty of ham added in.  Maybe next time I'll make them from scratch.

Wow, we had pasta and vegetables too. I like your cream sauce !! Ours was an olive oil base with cut up tomatoes, zucchini, portobello mushrooms, diced carrots for sweetness, artichoke hearts, and spices my wife won't tell me. Good, and our vegetarian guest liked it...but oh that cream sauce looks amazing. I see peas and corn and cut up tomatoes. I like the peas. They always go great with a cream sauce.

I wanted bacon, but it was in the freezer so I added a couple of cans of chicken instead. Sauce was evaporated milk, chive and onion cream cheese, and cheddar cheese. Frozen peas, canned corn, and canned diced tomatoes with sweet onion.
 
Your pasta and vegetables sounds fantastic, too, leethebard! A version of that may well make an appearance at my house some time, although maybe with zucchini or summer squash noodles.
 
I freely admit to an addiction for those boxed scalloped potatoes.

I noticed a new chain opened near me so today was the day to try it.
 
BurgerIM   I looked at the menu and was totally lost.  They only sell doubles and triples.  I don't like doubles.  
 
But the cashier said that there's only one patty.  They only sell slider, 3 ounce burgers.  I'll just link to the menu.

What a strange concept which I think is working for them.
 
You order 2 or 3 burgers... choose your proteins, toppings, buns and sides.  They don't sell singles!
I had a merguez burger and a falafel burger with a classic toppings and sweet potato fries.  What good burgers!  Everything was good.  Two were too many so next time we share!

Still experimenting with the Instapot.  Country pork ribs cooked with small potatoes and sauerkraut.  45 minutes on high, natural release.  VERY DRY.  
 

The potatoes were sealed in the foil

Working in Kalamazoo, got an unexpected 2.5 hour dinner break. Meant to take a picture, completely forgot. Next time!

My wife found a recipe in a novel she's reading that sounded good,so she made it. It was similar to the Orange chicken you find in a Chinese restaurant, only with lemon. Nicely deep fried chicken chunks in a lemon glaze. It was amazing. She made Amish buttered noodles on the side and summer squash. Great dinner!

Lemon Chicken? That's a staple at many Chinese restaurants and a favourite of my wife's, (when it's not flour coated chicken). It's quite yummy and the sauce is really easy to make, (if you're using restaurant style sauce).

Tonight it was my turn to cook and I made an old Italian comfort dish I learned many decades ago from my mon "cici d' pasta...or as I called it more than 60 years ago "Pasta Fagiole, only with cici beans". Haven't had it in maybe 7-10 years so it was fun. Had to go to the Italian deli to find Ditali pasta, but it was worth it. Also got a great loaf of Italian breadwhileIwas there. My kind of meal!

I cook country style ribs in mine all the time. Can't say I've had them come out dry before, though. 45 minutes is a bit long. I usually just go with the default "meat/stew" button. That runs about 30 minutes or so, and does it just fine. My ribs are usually the longer cut, too and I tend to go for a marbled cut. Yours look meatier than mine usually do. The spuds look great!

I've checked out a few Facebook Instapot sites and 20 minutes seems to be the time I should have had them under pressure.  I don't have meat settings on mine.  I also let it come to a full natural depressure which was also probably too long.  That won't stop me from trying again.  These were very meaty, not fatty at all and cooked to shoe leather properties.
 
I poked the potatoes, wrapped them in foil and place them over the ribs.  They were perfect!
 

 
Think the next time I do the country ribs I'll use a jar of tomatillo salsa and add onions, garlic and some hominy.  Probably add some chicken broth.  Sounds good in theory!

My life has been reduced to working, driving through ludicrous weather (the show is about 65 miles away), and catching a bit of sleep when I can. Yesterday I ordered three sandwiches from Jimmy John's so I could eat them this weekend. Today was roast beef and provolone with BBQ chips. I believe I get a day off on the 19th for the first time since I got home from the Guy's house.

Tonight I made red beans and rice thanks to the recipe from Root-Beer Man. Bob declared "this is wonderful!" Nuff said. Next up this week-Mar's tamale pie!
