We celebrated DST with steak and baked potatoes, too!  But instead of a salad we had a few skewers of grilled shrimp.

I'm having a quick, easy Costco dinner.
 
Frozen, Asian chicken dumplings with a wonderful soy sauce of some sort.  
 
I have a neighborhood meeting and don't feel like cooking before it.

I love a nicely done scallop and those look great! Scallops were the first dish I ever learned to prep in a professional kitchen. Hope yours turn out as good as that picture!
 
Dinner tonight is Stouffer's Creamed Chipped Beef on Toast. My daughter had an orchestra concert and time was too short to cook, so cold food it was!

I used the Instapot again.  I followed a recipe for Chicken Vegetables and Noodles.

Wasn't bad but would be much better without the frozen noodles, thickened and made into chicken pot pies.
 
This recipe used frozen mixed vegetables and frozen noodles.

I found them at Walmart.  They seem to carry a lot of products that I've seen in Texas like pimento cheese.  Maybe they're Southern items.  The noodles were very thick and too al dente for me.  The chicken also broke down in the pressure cooker more than I like.... under 8 minutes of pressure!  I'm learning!
 
I bought more Country Ribs so they're next up.  Or up next.

Frozen noodles. I don't see that every day!


We started using the REAMES frozen Dumplings when we lived in Iowa...we can also get them here....not homemade quality, but quite convenient.

I've never seen the REAMES frozen Dumplings around here.  Sort of the same thing, only wider and shorter.  Like me!

Traditions...we don't need no stinkin' traditions. Monday we had a nice fat "Non Vegan" Corned Beef point-Yum. Tonight we're having my Wife's awesome Spanish Rice. Thursday we had our Daughter's requested B-Day Dinner. I got a local piece of Lamb from Cedar Creek Meat Market and butchered it down to a Rack-Garlic and Dijon crusted, and we had it with Roasted Asparagus and my Wife's bodacious Baked Stuffed Potatoes.

It was beyond hideous.  Salt isn't as salty as this was.  It's going back to Costco tomorrow.  No one could eat it.  I usually don't return things but this made me look bad!  It was an already prepared, microwave for 5 minutes per pound corned beef.  I made the vegetables separately, thank goodness.
 
I've never tasted any food so salty.  Something had to be wrong with it.  I'm hoping others also complain.  It totally ruined tonight's dinner.
 
But it was pretty.  Can't be saved!

Roasted a chicken that was liberally coated with Shwarma seasoning and Aleppo pepper. Came out very tasty! Also threw some sliced zucchini with butter, olive oil and Parmesan in to bake. And, as an added side I made gluten free mac and cheese, (mainly because my daughter won't eat zucchini!). Worked out pretty well.

Tonight was that night.
 
I used up the peanut butter the last time I had that urge... months ago!  I forgot to replace it.  NOT happy!
 
So I ate some of the boiled peanuts with Old Bay's Spice I made in the Instapot.
 
I still want my sandwich!

I absolutely adore boiled peanuts. Always have, as every good Southern kid does! How'd they turn out in the Instant Pot?
 
Tonight's dinner was grilled tuna steaks, medium grain rice and Japanese pickles (daikon and eggplant). Not a crumb was left over!

I had this recipe but...  I didn't measure the salt (I used regular salt) and probably didn't use this much.  I did not use the broth or vinegar.  I used a 2 T Old Bay's Seasoning and water.
 
I did 45 minutes with a full natural release and the water was very salty and the peanuts weren't soft enough.  I repeated it and left it overnight.  PERFECT!
 
Instapot Cajun Boiled Peanuts
 
2 pounds or less raw Valencia Peanuts  BOUGHT THESE ON AMAZON
½ cup Kosher Sea Salt
½ cup Cajun Seasoning
2 T Apple Cider Vinegar
48 ounces Beef Broth + water to cover
 
One hour, with something on top to weight down the peanuts, water just over but not over max limit… natural release.  If not done 30 minutes more.[/color=blue]

Wow. That's a different kinda recipe! I have always used green peanuts, and not raw (as they are usually dried and won't take up water well). Not sure about the broth, either. I think you made a good call with just the water, salt and spice. That's all you really need. Cajun spice is a good addition, too and very popular. I like Old Bay, though! I'll have to give that a try. Next time you need peanuts, and want to try using the easier to cook green peanuts, check your local Asian grocer (if they have a produce section). That's where I usually get mine.

Oh I know about green peanuts. I was amazed by them when I first saw them in mounds in Publix grocery store.  I'd never seen or heard of them before.  Some things you take for granted.  I never, ever thought about what peanuts in the shell looked like prior to roasting.

The first time I had boiled peanuts, they were made for me in Port Charlotte, Florida by a transplant from Moncks Corner, South Carolina.  They are truly the best way to go and the original way to go.
 
But, we don't get them here in California.  They don't travel.  Using the roasted variety is the next best thing when you can't get the real deal and really, they are not bad.
