I had salmon for lunch so it was a light dinner for me.
 
My strawberries were looking sad and there's no way I'd eat them looking like that.  But wait!
 
I threw them into the Vitamix with some ice, heavy cream, coconut milk and a couple tablespoons of cottage cheese for thickness.  FANTASTIC!!!  I used the cottage cheese because I was out of yogurt.  The combination will be repeated!

That sounds great, Mar! I keep thinking I should start making smoothies.
 
Tonight, however... When you get home at 10:30pm and realize you've not yet eaten, dinner becomes interesting. While waiting for my ham, bacon, and pineapple pizza to arrive, I ate some yogurt, a handful of tomatoes, a chunk of cheese, some carrot sticks dipped in blue cheese dressing, a piece of elk jerky, and a piece of bread and butter. And now I have all but one slice of a large pizza in the fridge.

Same as mine except she tells me to make little baggies of fresh fruit for snacks.    I'm doing Keto so most fruit is out.

So far it's a slow go.  Seven pounds in 6 weeks.
 
I just finished some Tandoori chicken.  No carbs and no skin.  Lots of flavor!

I made a few changes when making the pigs.  Instead of small hot dogs I upsized to the 5:1 (3 oz. each) Mr. Baseball's Famous Franks, substituted Muenster cheese for American, and used Pillsbury's unperforated crescent roll sheet instead of the perforated, ready-to-roll version.  I laid out the sheet and since there were 4 hot dogs I cut it into 4 strips lengthwise, and then cut each strip in half across.  Then I took a half strip and wrapped half of a hot dog from the center out and repeated the process with the other half, and the result was 4 evenly-wrapped pigs in a blanket that browned very nicely.  If you've ever tried to make pigs and wound up with too much dough at 1 end and not enough at the other (my downfall for years), working from the center out is the solution.

I picked up some sweet corn from the farm stand on my way home from work yesterday and soaked it in water with burgundy overnight. Tonight I grilled it, spritzing with the same water and wine mixture, then used probably way too much butter to eat it.
 
Then I realized corn is not a meal, so I had some yogurt and a fruit cup.

Grilled shrimp with grilled zucchini.  Then I used up the rest of the strawberries and made my cottage cheese/heavy cream strawberry shake.
 
Need more cottage cheese and strawberries!

Went with grilled Ahi Tuna steaks last night. 2 minutes on the grill and you're all done. Add in some medium grain rice and Japanese pickles and it was a hit.

My absolute favorite sandwich. Italian Frying peppers(Friadele??, or Campanella) cut in half fried in Olive oil, salted and served as a sandwich on a hunk of Italian bread....Yum!!
