One thing I saw was they now apparently use an Expo now instead of the waitstaff shouting orders to the cook.

I've only known what an expo was for a couple weeks now.  I was perusing the online jobsites and kept seeing this term pop up so I finally figured out that it's apparently the new modern term for expediter. That led me to find out what an expediter did as I was not familiar with that term either.

A very important position in a HIGH volume restaurant. You are running all the logistics and meshing the back and the front. "Organized Chaos" I call it.

We went for breakfast Sunday morning and it was very busy. One thing I saw was they now apparently use an Expo now instead of the waitstaff shouting orders to the cook. Also they had three cooks working on different parts of the orders instead of one cook doing it all.

That's standard for a busy weekend morning. Two, three, four cooks -- that's always the way its done. They usually even have one server who does nothing but take carryout orders.



My WH sets up a table and puts a coffee maker on it and provides free coffee while you wait on weekends.
Good strategy - Keeps people from leaving.

Well, we went to WH a couple of months ago, (to introduce the kids to it) and I must say, it was rather disappointing. While the bacon was cooked as ordered the eggs were all overcooked and the waffles, (even the chocolate chip ones for the kids) were pretty tasteless. If I had to choose between WH and Cracker Barrel for breakfast fare, CB will win hands down, every time. Waffle House was pretty disappointing.

While we like Waffle House, I'd agree; I'd choose Cracker Barrel for breakfast!

This may have already been covered somewhere in the 11 pages of this thread, or elsewhere, but there's an interesting WH related story making the news, due to Tropical Storm Harvey.  It seems the Federal Emergency Management Agency uses the Waffle House Index as a measure of the storm's destructive power.
 
WH locations can operate solely on gas power if necessary, no electrical service needed.  So a closed Waffle House usually means the area is a complete disaster.
 
This from a 2011 Wall Street Journal article:
"Green means the restaurant is serving a full menu, a signal that damage in an area is limited and the lights are on. Yellow means a limited menu, indicating power from a generator, at best, and low food supplies. Red means the restaurant is closed, a sign of severe damage in the area or unsafe conditions.

"If you get there and the Waffle House is closed?" FEMA Administrator Craig Fugate has said. "That's really bad. That's where you go to work."

While it's true that a Waffle House can operate (on a limited basis) without electric power, in some health department jurisdictions, including this one, if the power's out they have to stop letting customers in. Of course, without electricity there's no coffee and no waffles.

I guess I figured when they said they can operate solely on gas power, they were talking about a natural gas powered generator which would provide electricity. Is that not the case?

That may be the case for some stores, but most don't have generators. None of the stores in Ohio do, according to the franchisee for most of Ohio.
