While driving through Kansas, Cozy Inn in Salina, Bunker Hill Café in Bunker Hill and Al's Chickenette in Hays are all very close to I-70 and worth checking out.

Georgioz in Colfax, IA makes good pizza.

And if you take I-35/80 to the north of Des Moines, Smokey D's BBQ is right off the highway.

What time of the year are you going? If Winter, pack a case of Vienna Sausages in your trunk along with blankets, extra can of gas and flares. You can always melt snow for drinking water! I'm serious!
    EDIT
OK forget the Vienna Sausages, Pack a case of SPAM

For breakfast you can try Neighbor's Cafe in McPherson, KS.  They open early; I think at 6 AM.  Food is good and portions are BIG.

Heading out of Chicago, try Old Fashioned Donuts reviewed on this site.  The apple fritters are well worth the excursion.  They, too, are open early.  Call ahead to make sure they have some on hand.

I-80 in Nebraska has more trucks and less food than I-70 in Kansas. Plus you've entered BBQland.

Just out of curiosity why was foodbme's post recommending that someone driving on Interstate 80 during winter pack some canned food flagged as spam?
