Here is the most recent recipe I've seen. It was in the Daily Oklahoman
on 17 April 2010 where it is attributed to a singer with a Christian group that has published a cookbook.
With American cheese and mild cheddar and diced tomatoes instead of Ro-Tel,

Denise Jone's King Ranch Casserole
Serves 8 to 10 6 pieces of boneless, skinless chicken breast, cooked and cut up ½ stick butter 1 onion, chopped 16-ounce can diced tomatoes 8 ounces American cheese ½ cup chicken broth (from boiling the chicken) ½ teaspoon garlic powder ½ teaspoon chili powder 8 ounces mild cheddar cheese, grated Crushed tortilla chips to make ½-inch layer in bottom of 9x13 baking dish 1 can cream of mushroom soup 1 can cream of chicken soup.
→Preheat oven to 350. →Grease 9x13 baking dish. →Crush chips in bottom of baking dish. →Saute onion in butter. →In large bowl combine all ingredients except cheddar cheese. →Pour mixture over chips. →Top with cheddar cheese. →Bake for 30 minutes or until bubbly. →Source: Cooking With Grace: A Cookbook From Point of Grace
