RE: looking for slow roaster
Alto-Shaam's run used for a few hundred up to a few thousand depending on what you want to use them on. Not to be disrespectful, but they are nothing that could be compared to a Nesco or Rival-type roaster that your grandmother owned. If you want to heat up a ham, go with the inexpensive Nesco. If you plan on slow roasting your restaurant's prime rib's, you'd want a commercial oven. Really, really apples and oranges here.
