RE: Pita fillings
the sandwich shop my wife manages use's half a pita for their various coldcut sandwichs as well as a breakfast sandwich- eggs,cheese,bacon or sausage- they also sell the namesake sandwich in a pita instead of a roll, its made fresh, not steamed. --- back, I called the misses and asked her to bring one home for me--- its just browned ground beef with a couple seasonings, cheese, onions and tomatoes and in my case hot peppers.
I use them at home for tuna, shrimp or crab salad, cheesesteak makings or the same fillings for a taco/buritto. As with wraps,pita's are versatial with an endless list of fillings
