RE: Avocado...on everything!
A nice little first course adapted by me from Jacques Pepin's "Fast Food My Way":
Halve, pit, peel, and large-dice the avocado. Toss it with a little lime juice to prevent darkening.
Lay a little shredded lettuce on a salad plate. Top with avocado.
In a small bowl, mix together a little ketchup and mayo, thin with a little water, add hot sauce, salt, and pepper to taste. Drizzle sauce around salad or over the avocado.
Top with fried tortilla strips, crushed tortilla chips, or even sunflower seeds, almonds -- anything to add a little crunch.
