JAKE- We use a cast-iron skillet often to do our Steaks. Just a touch of Bacon-fat, heat it up good and let'em go. Works for us every time!

Our local Market has the T-Bones at $5.99 a LB this week. I called in my order for 15, cut 1.5 inches thick and using the first four or five cuts from the 'Porterhouse end'. Our local guy knows his beef, and (so far) has honored my requests for the larger filet pieces.
We used to each eat one of this beauties (with some left-overs scraps), but now One does it just fine for the two of us. This leaves us with one great doggie-bone, and Two Doggies to satisfy. OHHH, The decisions !!
