What you see here are Phil Rohrer's "Famous" Raw Fries
from Phil Rohrer's Lunch
in Two Rivers. These are essentially fresh potato chips; but they are not allowed to get crispy. They are served when they are still slightly limp or even soggy. You can get them plain, with butter, or with gravy as I did.
When Phil makes them, he takes a whole russet potato and slices it directly into the deep fryer using a hand held mandolin. It is quite impressive to see.
