I got a lovely PM from CajunKing to say Hi, and I wanted to return for a bit to my "old haunt." Haven't really been on the site for a year or so but Tis the Season.  
Now, I am looking for a good recipe for Bay Corn for New Years Eve!.......................)

Bay Corn Elote should be big for Christmas this year. Especially down south. Tamales and Bay Corn Elote could become a new tradetion.

Ahhh yes
BAY CORN etouffee - Hopefully the drought this year didnt cause the Bay Corn crops to wither and die.

Ah.this post has been resurrected and perhaps some others will be too.  I understand that Shin-Wa Choppy Chewey has just opened it's 17th Baycorn factory in China in order to exploit the Seychelle market. The Seychelles are unable to grow Baycorn and must import all of it for their national dish.........UkindanutsBro.....Baycorn, Sea Urchin and Lychee nuts cooked in a garlic sauce and served over fried Monkfish
