Two weeks in a row I've managed to serve ALL of the leftovers for dinner so none of them have to go out in the trash!
We had the last two pieces of shrimp-avocado-feta quiche, a dab of green beans, a dab of peas, a dab of French-style green beans, a dab of cottage cheese, and some deli redskin potato salad. Tomorrow I cook. Cheddar Bacon Asparagus Strata
is the recipe I used, if you want to try tweaking it yourselves. I probably won't get to it again until spring when asparagus is in season here and the farmer's market is open. I'm going to see if I can't make it with some of the garlic-herb bread from the Amish bakery...they stud the entire loaf with whole cloves of garlic and I think it would be an excellent choice.
