Chewy, I have seen Pastrami done like this before. They dip it in a Aujus and put it on Rye bread, it's always been good. I have seen it done with Pork and Roastbeef. I thought you were the poster boy for Philippes, how the hell do you think they heat the meat........
They roast all their meat, that's where they get their juice, they also hold it in a warmer, and dip the bread, not the meat, PNWCHEF, they certainly don't boil their Lamb, Turkey, Tops, and Pork, shame on you!
Katz's and similiar well known Deli's dont slice and boil either...You need to come here for a tutorial and a boiled Baby Back Rib!
