I prefer to add my seasonings with hot sauces but I expect food out to have some flavor without being too salty.
No one ever said corporate america used logic in their decision making processes.
Food purveyors including restaurant chains spend millions on market research, focus groups, food engineers & chemists, taste tests, etc to make food taste the way people will like it and buy it. Most people want the food they eat out to be flavorful. Salt enhances flavor so logically, they give people what they want.
Then, along came the "Salt is BAD for you" people. So now, they give people what they want - less salt. It's all very logical.
Despite all this logical reasoning, Boston Market food still sucks!!!!!!
