Recipe: Brains and Eggs
Ingredients
I set Brains
6 Eggs
2 T. Butter
1 t. Salt
Method
* Wash brains, remove all membranes
* Soak 1 hour in cold water w/salt
* Pour water off
* Cover once more with cold water
* Bring to boil, cook ten minutes
* Drain, plunge into cold water
* Remove, slice into thin pieces
* Combine with whipped eggs
* Heat butter in skillet
* Salt pan
* Pour brains and eggs into hot, buttered pan
* Stir, cook til eggs "set up"

Michael, the recipe is for pig's brains, not cow's brains.  I didn't think pigs were susceptible to bovine spongiform encephalopathy.
 
I've always been curious about how brains taste.  The only time I tried to order them (at a restaurant in Vienna), they were out of them.

When Mom made em, they were great.   But years ago when I tried to make 'pig' brains & eggs, they just don't taste that great.    ... Maybe I'll try again. I don't think I soaked in salt water.
 
Any way this is not a 'no brainer'

No no no -  many years ago my Mom would make this but very seldom.  I seem to remember the brains came in a jar?   Not sure - but I AM sure I wouldn't eat them.

Once at a nice restaurant, the gentleman with me or ordered fish.  It was served fried 'whole'  ... that is head, scales and all.   You carefully pull back the skin back and pull the meat from the bones.    You did not just cut into the fish or the inners would spill out.    ...

Back in the40's (Geez, I must be getting old), my uncle operated a slaughterhouse and did custom slaughtering for whomever was wanting. We visited the farm every summer for a few weeks, and Mom and Auntie worked to feed the horde of adults and 5 kids. On occasion, Uncle would bring home some of the "delicacies" the customer didn't want after the butchering. Mom and Auntie would open the package and squeal with delight at an assortment of brains, sweetbreads, kidneys, beef hearts, tongues, or whatever was there. They'd cook up a storm and try to get us kids to partake. I don't recall any of us taking them up on that. They, however, would enjoy the fare immensely. To this day, I have never tried any of these, and don't plan to either. Thanks for listening.

I'll order brains and eggs for breakfast any time I see it on a menu, which is not very often. In fact, I've had the dish only twice in my life - once at a huge truck stop just off I-95 about where it joins 301 north of Richmond; and again two years ago at Skyline Jack's in St Petersburg, Fl. It was excellent both times.
 
But, then, I like sweetbreads, liver, heart, kidneys, etc...

Or Anthony Hopkins in one of those "Silence of the Lambs" follow-ups, where he cut off and removed the top of Ray Liotta's skull while Ray was sitting at the dinner table and smiling.  Apparently freshness is paramount.
 
Around here we've had headcheese forever.   Wikipedia says it doesn't usually include the brain, but does include other tasty parts.  Not tasty enough for me, though.

I never seen head cheese to be made with brains.   The brains was saved for breakfast to served with eggs.    On the farm it wasn't wasted that way.   Just not that much brains from a 200-240 lb hog.

My Nona (mother's mother) would make brains and eggs for my father.  I think she felt sorry for him because my mother would not allow them in the house!  As much as I love sweetbreads and other offal, I'm thinking I would not like brains.

I believe that was in Raleigh and I was there and I almost gagged watching your order arrive.  Some like it and some don't and I am among the latter.  I do not know if it is the thought or potential texture.  You were sitting across from me.

B & E used to be a weekend breakfast for us in SoCal back in my 'youth' Mother did them quite well.  Since all the health issues and our relocation to Indiana, we have found them as 'Fair Food' at many of the county fairs and festivals in the Southeern part of the Hoosier State. I don't know (don't recall enough to compare) how Hog brains compare to beef brains...but I have tried the brain sandwiches a couple of times at local fairs and don't much care for them.

I'll call my dad tonight and get his pan fried balls recipe. They're delicious. He also scored a big bull coon last winter and braised it with a mess of sweet potatoes.

Here's a local sausage company in La Crosse that has won a gold medal in Germany for their headcheese, also for their Jellied Beef Loaf, which does look that appealing either.  But it too has been around forever.

I offered my neighbor tongue and eggs.  He wouldn't eat the tongue because it came out of a cow's mouth.  He just had the eggs.

I grew up eating brains, kidneys, liver, lungs...we ate whole hog on our farm long before nose to tail was even thought of. Nothing went to waste when we slaughtered a pig. I still routinely eat as much of the hog as I can get my hands on. We're having a boucherie this weekend and there will be precious little waste.

Jacques Pepin has devoted at least 2 TV episodes to offal and while it looks interesting I'm not sure I'm brave enough to try it.
 
When I was growing up we didn't waste any of the meat that came on the styrofoam tray.

The first time I had bull testicles my dad knew he was going to have to lie to me and my sister to get us to try them, and he did. They are delicious by the way but had I known in advance I doubt ten year old me would've willingly eaten them.

My Beloved has a cute take on it all:  "Don't ask" - or inquire too deeply.  She laughs at one of her sisters' asking if there is any alcohol in Tiramisu.  And, at any of her family wondering if there is any pork in an Italian meal.
 
A few days ago I gave my Beloved some pate served me at a Brasserie @ Haussmann & Tronchet and she loved it.  I 'sold it' as duck; the waiter, later, told the truth.

I'll bet cheap to free (farm labor) had a lot to do with that.   While the better parts of the animal was sold to the yuppy/tourist at the Mexican Grill restaurants.    1 table spoon of meat in a $4 taco.

Trust me.  Sweetbreads are such in high demand and so expensive, that you never ate them in paté!  Do you eat hot dogs?  You'd be surprised what goes in them.  It might say "all beef" but it's beef tendon, silverskin, etc. all "bleached" to have the same color.  Pass the sweetbreads and some veal kidneys in Armagnac.  Merci.
