So I decided to do fish tacos tonight. Of course, since today was National Margarita Day, I made margaritas for all of us.
I also made Mexican shrimp cocktails.
I started with some fresh cod. Marinated it with chipotle, cayenne, grapeseed oil, lemon and black pepper.
Grilled tortillas on the cast iron flattop.
Grilled the fish on the flattop.
Fresh chopped onions and cilantro.
Made the sauce with ranch dressing and Tapatio sauce.
Made some of the tacos with just the sauce, onions and cilantro.
Other people wanted hotter, so I made theirs with hot salsa.
They were yummy!
