I did one like that early last year. Was I think a 89 step van with a 14' box. When I got it the door had been removed and it has no wall studs. While I knew it could support equipment being mounted straight to the aluminum with through bolts, I was more concerned with the thing flexing in transit and wrecking havoc on anything mounted to it. I ended up taking a 2X6 14' piece of wood and mounting it just below counter height down the length of the thing on each side. That shored up the wall and reduced flex almost entirely and also gave me something to bracket my counters to.
Then I mirror gloss buffed the existing aluminum and that was that, didn't need stainless.
As far as what your doing, it depends on the gauge of the stainless. In reality, no as long as everything you mount hits a stud.
