Depends on the burger. My favourite is a flat top burger and it has to have American.

If it's a flame broiled burger then a nice bold cheddar.

I'm okay with some types of cheese but do not like blue. I find it too pungent and not complementary for a burger.

It really does depend on what's on it. A California burger: I change with my mood, at the time. If I'm having grilled mushrooms, a good swiss!

A good, sharp cheddar is my "go-to" cheese.  But I'm also with Lee, if I get sauteed mushrooms then I definitely need swiss on it.

Two slices of Sharp American. On a mushroom burger, like the others, a good Swiss.
I like blue cheese on my salad, not on my burger. I do sell a lot of bacon & blue burgers with grilled onions & horseradish mayo though, so it is popular on burgers.

Beef and blue cheese are a popular combination. I don't however get it. I find they compete rather than compliment.

For me, it has to be Colby. The mix of sharp and creamy is awesome. Makes great Mac and cheese too.

1. American cheese & grilled onions on a diner burger.
2. If we are getting grilled burgers, (at a resturant) its swiss cheese with sauted mushrooms.
3. If we make them at home, we use american cheese, yellow onion, sliced tomatoes & crunchy part of romaine lettuce
Our family loves burgers :)

And on rye it makes a great grilled cheese sandwich.

Colby, Swiss, Cheddar, Muenster, creamy blue...for me they're all good on (and in) a cheeseburger.  American is often too bland for me, though.

What I can never figure out is when to capitalize the name of a cheese or leave it lower case!

Cheddar. But like some have said, if mushrooms, then Swiss. And there's something to be said about Gouda with onions only.

At Terry's in Cincy I've had gouda and was quite pleased with it. At home it's either cheddar or American.

A few slices of American, a cheese I never eat "on its own".

For me, other cheeses I love by themselves:  Swiss, Bleu, Gruyere, etc. can sometimes overwhelm the burger/beef taste.

Most often, I do not put cheese on it.  When in the mood, 1 slice if White American cheese.   For me, too much cheese, or a sharp cheese, does not complement the burger.

Merkt's Sharp Cheddar Cheese Spread from Wisconsin.
The cheese spread makes for a nice melt, but the sharp cheddar gives it a teeny weenie kick.

If  no one else will admit it, I have no qualms. On a burger Velveeta, hands down. Yes, I know it is not cheese. But that gooey melting factor counts big time.

The original(red wax) Babybel cheese is a French version of the Dutch Edem cheese, available just about everywhere in the States and quite tasty on a burger.

Best,

It varies...with my mood, and with toppings. A burger with mushrooms must have Swiss for me.....Standard American is perfect...and the default cheese most places give you, and that's fine. If given a choice, then I'll get creative,as I said, depending on what I've put on it, Some cheddars overpower the burger. Monteray Jack works fine,,,,and I'll second Edam...which also works grated on a pizza!!!

100% with you on this.  I grew up with my dad using Velveeta on burgers and eating one today takes me back.

Still, I prefer pepper jack or bleu.  Never had gruyere or havarti on a burger and sure sounds like something I need to try.

I usually go with no cheese, as I find that cheese neutralizes (takes away) some of the good grilled taste of the meat.  Once in a while, I like a single thin slice of mild white American cheese.  Mild because it does not take too much away from the burger meat flavor.  White because it's what I grew up with.  Rhode Island, or perhaps it was much of new England in general did not have those orange/yellow colored cheeses, and I have yet to find those cows putting out orange/yellow milk.

Burgers that have lots of cheese, especially strong cheeses ... I view the same way as I view barbeque with lots of goopy sauce.

Exactly!  Except for Blue of course which adds a new dimension without taking away from the taste of the meat.
