Seems like folks are talking a lot about burritos in the Southeast. Here in LA, a famous one is in East LA, at El Tepeyac. It's called the Hollenbeck, after the LAPD station nearby. I guess cops eat more than doughnuts. This belly bomb weighs in at something like 2 pounds. It's not for me. For years, I've just made my own at home. Here's my latest:
A flour tortilla, big enough to fold one end and roll up. Spread refried beans down the middle. Toss on board some chopped red and green onion. Add either/or pickled jalapenos and if you can get 'em, fresh,chopped de-seeded roasted serranos (I just blacken a serrano with a pair of tongs over a gas flame, then rinse the burnt skin off). You can add a nice hot red or green salsa at this point. Now see if you can heat this in the microwave, or maybe a large pan. When heated, add grated cheese (I don't like the cheese to melt too much) and fresh chopped cilantro. Now add sour cream. Fold one end and roll it up. I eat mine with a fork. This is vegetarian, but of course you could add any kind of non-vegie item, or dump salsa on top, mojado style.
