In praise of the western omelette
Is there any omelette better than the western? Not for me.....
3 eggs, diced smoked ham, diced onion, and a ideally, a mix of diced green and sweet red peppers. I prefer no cheese, that takes it away from being a true western, in my book.
Lightly browned on the outside, and folded in the middle, or into thirds, it's a great breakfast, especially paired with good home fries, and whole wheat toast. Wash it down with some good strong black coffee, and you are good until lunch, or maybe after.
Can it be improved upon? What do you think?
