I wet aged a whole NY strip, all I had to do was to leave it in the cryo-vac package for 2 weeks in a fridge by itself, when I opened it there was no foul smell and the steak was as tender as filet mignon, flavor wasn't too overpowering either, I want to try it with grass fed beef to see if there's a difference.
