Anbody have any roast chicken recipes?
Gotcha. Now, seriously I have a really great seafood dish recipe I'd like to share. My Mom used to make this for us when I was a little kid. Pretty simple, but great.
Creamed Salt Cod (bacalhau) in a Baked Potato
one pound box salt cod...most I've found are from Nova Scotia
stick unsalted butter
one chopped onion
four stalks chopped celery
1/2 pint heavy cream
Old Bay to taste
coarse black pepper to taste (NO SALT...the fish supplies that)
First task is to soak and flush cod for at least 24 hours prior to cooking. It will initially look stiff, smelly, and inedible. After a few flushes and fresh water changes it will hydrate and actually look like fresh fish. Melt butter and add chopped ingredients to pan. Rough cube (about 1") cod and add along with the spices. Stir and then add cream. Simmer low for about 2 hrs. Serve in and on a fresh baked potato after slitting open and fluffing up a bit. You will want to eat the skin and all and will probably wish you had another potato. http://www.freshseafood.com/salted-cod-fish.html
