My Soup of the Day
A shrimp-seafood soup. It made a good light soup for lunch (1:30 pm) and an appetizer for the black-eyed peas & hog joules tonight.
Last Friday or Saturday night my wife boiled shrimp for our supper. I realize she didn't use a lot of seasoning in the water and it had a good shrimp flavor. I saved it. This afternoon, I pulled it out of the frig and heated. To the shrimp stock (abt 2 1/2 quarts), I added 1/2 can of evaporated milk; 1/4 stick of butter/margarine; 1/2 of medium onion; small can of minced clams & juice; and a small can of crab. When the soup was hot (not boiling), I added the left over shrimp (wasn't much, may be 12 or so); about 5 outer leaves of Napa cabbage (chopped) and pepper & garlic power.
About a month ago, I made a clear soup using shrimp stock made of shells from 2 lbs of shrimp. This one just had some diced onion and a little Napa cabbage.
